Bacon Wrapped Crackers

My nephew, Robbie, took some of these to work. The following December he asked his boss for come in later on Christmas Eve. The boss said sure, but only if he brought in a batch of these treats when he came in. So I made a triple batch.



Before I start any recipe I get all of my ingredients together and the other things I will need. In this case I lined the jelly roll pan with foil. I to that so that I don't have a big mess to clean up. As you can see from the uncovered edge of my pan, this pan has been used a lot. after a while you realize that no amount of elbow grease and scrubbing pads will remove the baked on stuff. It's not pretty anymore but it's clean.


I had enough unbroken crackers to make 23. I like to lay the crackers out to know how much bacon to cut in half. It also makes the assembly go a little faster.



Next I cut 12 pieces of bacon in half. That is almost the entire package. You can use a sharp knife or some kitchen scissors. to cut the bacon.



Now take each piece of bacon and slightly stretch it. This will make wrapping the cracker easier.



Mix together the brown sugar and cayenne pepper in a small bowl. I used light brown sugar here.



Put the cracker in your hand. Gently put a teaspoon of the sugar on the middle of the cracker.



Now it's time to wrap the cracker. I start at the top, leaving a bit of bacon to wrap under at the end. Be patient, gentle and slow. If you feel the cracker break, and some will break, just continue to wrap the cracker. Once it is cooked no one will know.



Cover as much of the cracker as the bacon will allow.



Lookin' good! There are at least 5 crackers that broke in my hand. Can you spot them? These bacon babies are ready to cook. But wait! We have to make the bonus 'Cook's Treat'.


Put the remainder of the bacon on another foil covered pan. You will have a little bit of sugar left. Now we'll use that up.



Smear the sugar on each piece of bacon.



Put the crackers on the middle rack. The sugar bacon on the rack directly below. These are the baked crackers.



And here is the candied bacon. It is so good you can justifiably claim it as the 'Cook's Treat'. It is also so delicious with your breakfast, any kind of breakfast.
