One Skillet Buffalo Chicken Dip

Nothing brings folks more pleasure during a big game than Buffalo Chicken. I find making the wings is just too much work at the last minute and is really messy to eat. There a many hot Buffalo Chicken dip recipes out there. This one is made in your 10 inch, oven proof skillet and eliminates getting a lot of dishes dirty.


Here it is, fresh out of the oven.

We are watching The Puppy Bowl. This is the perfect Bowl game dip.





To get started, you will gather cheese to shred for the topping. You can use pre-shredded cheese if you don't want to shred it yourself. I use 4 ounces each of mozzarella and Colby jack. You'll also need 1/2 cup sour cream, 4 ounces of cream cheese (softened), 1/3 cup blue cheese dressing, 1/4 cup of your favorite buffalo or hot sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon celery seeds, 2 cups of finely chopped chicken.


Today I used 2 cans of chicken which I drained. You can of course use some chicken that you have cooked or pull some off a rotisserie chicken.


Warm up your skillet on medium high heat. Add a tablespoon each of olive oil and butter.


Put the chicken in and sprinkle the garlic salt over the chicken. Use your spoon to break the chicken into small pieces to make it easier to eat. Stir and heat through. Turn the heat to medium low and add the hot sauce, cream cheese and sour cream. Stir thoroughly. Sprinkle the celery seeds over and stir in. Turn off the heat. Stir in the blue cheese dressing.


Smooth the dip mix evenly in the skillet. Cover the top with the shredded cheese. I also sprinkled a couple of tablespoons of bacon bits over the top. Pre-heat the oven to 425 and cook for 15-20 minutes. You will know it is done when it is bubbling around the edges and the cheese is melted and bubbly. Every skillet and oven is different so keep an eye on it.


When it comes out of the oven you can sprinkle chopped scallions and/or blue cheese crumbles over the top. Serve with whatever you like best - celery, tortilla chips, pita chips, carrot sticks, whatever you like!
